Grain-Free Orange Chicken

Because who doesn't love a healthier version of your Chinese take-out favorite?

I should note that the Orange Chicken is grain-free but I definitely ate this with some white rice.

So I have been seeing a lot of the memes about "skip the 5 paragraphs about your weekend Sharon and get to the damn recipe" so in lieu of that trending Instagram favorite, here is your damn recipe.

 

Grain-Free Orange Chicken

Ingredients

  • 1-1.5 lbs. cubed chicken in ½” pieces

  • 3 tbsp. tapioca starch

  • 1 tsp. salt

  • ¼ tsp. black pepper

  • ¼ cup avocado oil, divided

  • 1” peeled & grated ginger

  • 3 cloves garlic, minced

  • 1 yellow onion, chopped

  • 1 orange bell pepper, chopped

  • Green onion & sesame seeds for garnish

Sauce

  • 3 tbsp. coconut aminos

  • ½ tsp. sesame oil

  • 1 tsp. fish sauce

  • ¼ tsp. orange zest

  • ¼ cup fresh orange juice

  • 1.5 tbsp. lime juice

  • 1.5 tbsp. rice vinegar

  • ¼ cup chicken stock or bone broth

  • ½ tsp. red chili flakes

Directions:

  1. Mix tapioca starch, salt, & pepper in a large bowl. Dredge chicken in mixture.

  2. Heat 1 tbsp. of avocado oil over medium-high heat per batch of chicken. Saute batched o chicken in oil so not to overcrowd the pan until golden brown, ~6 minutes. Remove chicken & set on the side on a paper towel-lined plate.

  3. Saute onion & bell pepper until soft. Add minced garlic & ginger. Saute another 1-2 minutes, until fragrant.

  4. While cooking, whisk together ingredients for the sauce in a bowl. Add sauce to pan & chicken. Cook until sauce is thick & chicken is cooked through ~7-10 minutes.

  5. Garnish with green onion & sesame seeds

  6. Serve with cauliflower rice or white rice.
